CRITICS’ DARLING APPOINTED NEW HEAD CHEF AT MICHELIN AWARDED AOC IN COPENHAGEN

As Head Chef Ronny Emborg has chosen new paths in continuously developing his skills as a recognized Chef, another critics’ darling of Copenhagen – the highly experienced Gourmet Chef, Søren Selin, has been appointed the new Head Chef of the desirable dining rooms, situated in the vaulted 17th century cellar in the heart of Copenhagen.

”It’s been three great years with Ronny and I wish him all the best on his future quest”, states Christian Aarø, Champion Sommelier and owner of Restaurant AOC.

Mr. Aarø continues; ”At the same time this almost feels like opening a new restaurant, and I’ve had my eyes set on Søren Selin for some time now. I dined at his – soon to be former – place of work last year, and again this year and was equally very impressed both times. We agree on the future and I’m very positive about this collaboration. Søren is the right man for the job.”

Author & Food Critic Søren Frank of national Danish newspaper Berlingske Tidende agrees: “It is a great choice of chef. Søren Selin is a really good cook, he’s modern and he won’t be a major break in the style that AOC is recognized for. He so to speak fits into the surroundings. The last few times I’ve dining his food, the level has been very high and modern with a focus on the Nordics”, Mr. Frank explains.

Food Critic and Culinary Editor Ole Troelsø of Børsen (Danish Financial Times), is equally positive: “Søren Selin is a very good choice as Ronny Emborg’s successor. Selin’s gastronomy has a matrix matching Christian Aarø’s way of thinking wine well, and I’m quite positive that AOC keeps the Michelin star. This also suits Søren Selin whose cuisine for long has deserved such. So if the mountain won’t come to Mohammed…” Mr. Troelsø ends.

The center of attention, Søren Selin, is thrilled about the new opportunity:

”My passion has always been to cook at the very highest level and AOC gives me a unique chance to further develop my kitchen: A local cuisine that’s rooted in Danish ingredients and seasons, and a natural cuisine where the raw materials are the stars.”

He continues: “I’m fully aware that AOC already is among the absolute top restaurants in Denmark, but it’s my clear ambition to take the restaurant to the next level, now when I have the opportunity to solely concentrate on refining my cuisine.”

Chef Selin has a culinary past at Le Relais Louis XIII (2 Star Michelin) and Jules Verne (1 Star Michelin), both situated in Paris, and at Alberto K in Copenhagen, – the last four years as Executive Head Chef of the restaurant, including all food related matters of the iconic Hotel Royal. Besides being rewarded with only top reviews on his gastronomy, he has been nominated in various categories for “The Danish Dish of Year” three years in a row.

Søren Selin is appointed Head Chef of AOC from March 2013. With him he takes his trusted Sous Chef Jakob Bär Mogensen, also currently of Alberto K added an impressive resume including the 2-starred Michelin Restaurant AbaC in Barcelona.
