At two-starred Michelin Restaurant AOC the dedicated every day seek to emphasise what is wonderful from local Nordic nature as well as stimulating as many of our senses as possible:

The gastronomic philosophy is positioned from a modern style, using fresh Nordic produce sourced from both the earth and sea – a concept of pure savour.
Head chef Søren Selin, with his team of skilled chefs, works seamlessly striving to achieve perfection within the New Nordic Kitche’. Highly renowned Champion Sommelier and Restaurateur, Christian Aarø, tastes and selects wine from both the old and the new world regions so that the food and wine accompanies each other in perfect harmony.
This interaction between food and wine can be experienced through either the 7 or 10-course menu. During the weekdays it is also possible to settle for a 5-course menu. Furthermore AOC always offer the possibility to choose amongst the selected wine menu or a specific wine from their wide-ranging wine list.
AOC is situated in the vaulted cellar of the historic mansion, Moltkes Palæ, which dates back to the 17th century and is positioned just a few minutes from Kongens Nytorv in the centre of Copenhagen.
The main dining room seats 50 guests at round tables as well as a chef’s table. The can additionally provide two private dining rooms, which are ideal for smaller parties seeking an evening of refined dining in privacy.
AOC is awarded 2 stars in Guide Michelin.

Christian Aarø Mortensen is the owner and sommelier at one Michelin starred restaurant AOC in Copenhagen. Kalle Bergman caught up with him to talk about the restaurant and how to pair the New Nordic Cuisine with wine.
