Since opening in Barcelona in 2021, Sips has rewritten the rules of cocktail culture. Gone are the barriers between bartender and guest—at the Drinkery House, cocktails are prepared at open work islands, inviting interaction, creativity, and a seamless flow of hospitality. The drinks themselves are unexpected, experiential, and avant-garde—like Krypta, a gin, brandy, kiwi, and lime blend served in a bespoke olfactory chamber, or the Primordial, a whisky, port, and pear creation presented in sculpted metal hands.
And now, Esencia, a new chapter in Sips’ evolution, is set to push the boundaries of liquid innovation even further. This 14-seat omakase-style cocktail experience, opened in 2024, present a tasting menu of drinks, offering a multi-sensory journey that mirrors the storytelling and technical mastery of the world’s greatest restaurants—except here, every course is a sip.
Both Sips Drinkery House and Sips Esencia are different spaces, though connected, sharing the same adress.
With roots in London’s legendary Artesian—where Simone led the bar to a record four consecutive No. 1 rankings on The World’s 50 Best Bars (2012-2015)—and elBarri by the Adrià brothers, where Marc revolutionised drink culture, the duo behind Sips are no strangers to making history. Their latest project Esencia is already becoming one of the most talked-about cocktail bar on the planet—and they’re only just beginning.
